Creamy Mango Shake

Creamy Mango Shake



Mango is the king of all fruits.Who doesn't like mangoes ?  It's a very tasty and  good source of energy major contents being vitamin A,C and D.
 
Recipe Type: beverages

Ingredients

2 medium sized peeled Mangoes
4 tsp sugar, Jaggery or Honey
1/4 tsp Cardamom  powder
2 glass or 400 ml full cream milk
Saffron /jaffran/kesar

Prep time 5 minutes

Steps:-

  • Cut mangoes in small piece then add mango pieces, sugar, half cup cream milk,Cardamom  powder and pinch of saffron to the blender jar.





  • Make nice smooth paste, then add milk and blend till it gets consistency.



  • Now your nice Creamy Mango Shake is ready to serve.
  • Pour in glass and garnish with Saffron. If u like, then add chopped nuts like cashew, almond and pistachio.

Enjoy Mango Shake in summers and refresh yourself  with healthy drink!! 

Banana Paratha

Ingredients

For Banana Masala Stuffing
4 row banana 
1 Green chilli
1/4 tsp turmeric powder
1 tsp Red chilli powder
Salt to taste
chopped coriander
lemon juice according to taste

For whole wheat dough
2 cups whole wheat flour
½ tsp salt
water as required for kneading


Step by step direction

  • In one bowl, add flour, salt and water as required. Mix it well for smooth and soft dough. Keep aside for half an hour to rest.



  • Make a medium ball dough,roll  it. Dust with some flour and roll it in a circular manner. Place the banana stuffing in the center.


  • Join all the edges of roti and cover all masala with roll out roti and make a ball. 

  • Dust flour on the surface and roll out the filled ball very care fully. Make stuff paratha as size of chapati.




  • Heat tava or nonstick pan, place rolled banana paratha. The griddle should be hot when you place paratha, then cook on low flame so that it's cooked properly.


  • Flip the paratha and cook on medium flame.


  • Spread ghee or oil on the paratha. Then flip again for shallow fry and press in circular manner.



  • Cook till  the paratha have brownish color, crisp
Now your banana  paratha is ready to eat. serve it hot with curd and green chutney :)


Banana Spinach Tiki

Banana Spinach Tikki

Ingredients

4 raw banana
1 bunch of Spinach
1 cup roasted gram flour/besan
2 chopped green chilli
1 tsp red chilli powder
1/4 tsp turmeric powder/haldi
a pinch of asafoetida/hing
2 tbs chopped coriander
1/2 tsp ajvain and sofe


Step by step direction :- 


  • Cut raw banana's in 3 to 4 pieces each and boil them,after they are bioled let it cool down and then peel the banana.



  • Then mesh banana pieces.



  • Rinse the spinach leaves in water and drain the water. 
  • Blanche Spinach leaves : boil Spinach leaves in hot water for 2-3 minutes.Drain the water and keep the spinach leaves in cold water





  •  By this  the spinach will not loose it's greenness.Then drain the water and squeeze out any left out water from spinach and chop it.


  • Dry roast gram flour in a pan till its color gets brown and smells good.



  • Mix well all spinach,banana and  roasted gram flour.



  • Add all the spices and mix it well. If you like garam masala, you can add that too. 


  • If there's  moisture in the spinach,you can apply some oil to your palms when shaping the tiki.




  • Heat the non stick pan and add few drops of oil.Shallow fry all the tikis in pan till they become crispy and brown.




Serve it with green chutney and curd :)











Loki ka Halwa


Loki Halwa or Bottle gourd halwa



Loki / Bottle gourd Halwa is as good as carrot halwa and tastes great!! 
It is very easy to prepare and  high in nutrition.

Ingredients

1 big bowl grated Bottle gourd or Loki
1 liter Milk
1/2 cup sugar
A pinch of cardamom powder
Dry fruits for garnishing (cashew, almond, pistachio)


Steps to prepare :- 

  • First, peel the Loki and grate it.



  • Then hit the pan or kadai and add ghee.
  • Add the grated Loki in the pan and fry it on high flame in the pan for 5 minutes.
  • Cook it on high flame till the loki is fried and then add milk and stir it till it boils and then cook it on low flame.



  • Keep stirring till milk reduces and gets think consistency like khoya.
  • Then add sugar, sugar will melt  so keep stirring. 



  • When water reduces and halwa get desired consistency then add cardamom powder and dry fruits as per your desire.


Your Loki Halwa is ready to eat, serve it hot :)







Green Dal Chilla


Green Dal Chilla

 


It's a snack or breakfast time dish which is very simple to prepare and extremely healthy.

Recipe  Break fast or Snacks
Prep time 5 mints
Cook time 5 mints

Ingredients

For Chilla

3/4 cup green gram or moong dal
1/4 cup split yellow gram
2-3 green chilly
a pinch of asafoetida or hing
Salt to taste


For filling

100 grm crumbled paneer
1 fine chopped bell papper
2 medium size chopped tomato
2 tbsp chopped coriander
chat masala or black pepper powder(as per taste)


Step by step directions to prepare green dal chilla :-

First of all we can wash green gram (moong dal) and split yellow dal.Then you can mix both and soak in enough water for at least  for 4- 5 hours till it become little soft.



After that grind soaked dals with green chilli and make batter same as dosa or idli consistency.


Add asafoetida/hing  and salt to taste and mix well.

Heat the non stick pan or iron griddle/tava. Apply little ghee or oil on the griddle but if you are using non stick pan, no need to apply ghee or oil.Take one round spoonful of batter, pour on the pan and quickly spread in one direction in a circular manner.


Apply little bit of  ghee or oil if you want to enhance the taste.Cook on low flame till it gets at nice brown color.

Then flip the chilla and let it cook on low flame for a minute or so and flip again.


Spread some chopped capsicum and tomato on the chilla and wait till they cook, then apply panner, coriender, chat masala and black pepper.




Cover the chilla with the other half and cook for 30 second.Serve Green dal chilla with green coconut or green chutney.

Green Cococnut Chutney

Green Coconut Chutney


The coconut chutney can be served with all south Indian dishes like idli, dosa, vada, appam, puddu etc.

Now coming straight to ingredients.

INGREDIENTS

For chutney
1 cup fresh grated coconut
2 tbsp rosted chana dal
1 green chilli/hari mirch
Some mint and coriander leaves
Salt to taste
1 tsp Lemon juice or 2 tbsp curd (as per taste)
roasted chana dal

Tempering

1/2 tsp ghee
1/2 mustered seeds
1/2 cumin seeds
5-6 curry leaves
A pinch of asafoetida or hing


Steps to make coconut chutney :

  • For chutney add coconut, mint and coriander leaves, chopped green chilly ,roasted chana dal and curd or lemon juice whichever you like the most.
  • Add salt to taste and water as  needed to grind all the ingredients.
For Tempering
  • Heat ghee/oil in a wok or  small pan.
  • Add mustered seeds and let it crackle then add cumin seed wait till becomes golden brown.
  • Then add curry leaves and at last add pinch of hing/asafoetida.
  • Quickly pour the tempering in the chutney and cover chutney pan with lid for 5 minutes.

Now coconut chutney is ready to be serverd :)




Jain Banana Masala Dosa


Jain Banana Masala Dosa 

How to make Jain dosa(without onion and garlic) with banana masala .


Making Masala Dosa is a simple and long process, but its worth the efforts.It will surely make your taste buds tickle :).
                                                    I have used raw banana in masala instead of potato as it's much more healthier than potato.

To start with first we have to get our ingredients ready for preparing plain dosa batter or you can also choose to get ready made batter available almost everywhere if you want instant dosa's.

But here's the process to perpare the batter: 
For that we need to soak dosa rice,black lentils/urad dal, split peigon peas/arhar dal/tur dal(whatever you may call it),methi seeds and then fine grind  it to a paste  and leave it overnight to ferment.I have added toor dal and methi to add crispiness to the dosa and good golden brown color.

INGREDIENTS :

Measuring cup used, 1cup or regular small bowl at home
Serves – 10 to 12 dosa

For Dosa Batter
 2 cup dosa rice
½ cup split black lentils ( urad dal)
¼ tsp fenugreek seed (methi)
1 tsp toor dal
Salt to taste
Water as required

For Jain Banana Masala
4 raw banana
5-10 curry leaves/ kadi pata
½ tsp mustard seeds/rai
1 tsp cumin seed/ jeera
1 or 2 chopped green chilly/ hari mirch
2 tbsp  chopped coriander
¼ tsp turmeric powder/ haldi
½ tsp red chilli powder
A pinch of asfoetida/ hing
1 tsp lemon juice
salt to taste 

Preparation Steps :- 

  • Getting the Dosa batter ready
  • Preparing the raw banana masala for the Dosa
  • Making the Masala Dosa
Preparing the dosa batter
  • First  clean and wash dosa rice,urad dal,toor dal and fenugreek seeds/methi seeds
  • Soak all of them together for 4-5 hours.
  • Drain the water from the soaked ingredients of batter,but don’t throw away the water you can use it while while grinding it to a paste.
  • Now let's grind it to a fine paste grind,add salt to taste and water as needed,you can use the water while grinding from the previous step as it contains hell lot of nutrients.
  • Now should get nice light fluffy paste as below and should not be grainy.
  • Cover and let the batter ferment for 8-10 hours and keep it in a nice warn place in a deep vessel.
Note :-  After fermentation, the dosa batter rises and doubles up.

Steps to make the raw Banana masala :

  • Cut and boil the raw banana in a pressure cooker or microwave.You could also mash them.
  •  In a  pan, heat oil or ghee, add asafoetida/hing, mustard seeds. Let it fry for about 10-12 seconds then cumin seeds. 
  • Now add  the chopped green chilly and curry leaves. Add the red chilly powder,turmeric powder and fry for 15-30 seconds.
      • Now Add the chopped boiled banana and salt. 
      • Mix the banana properly with the masala. Cook this banana masala for approx. 2-3 minutes.
      •  You can also add fine chopped coriander leaves and lemon juice as per your taste.
      Note :- As banana soaks lot of water you can add fine chopped tomato's.

      Steps to make Masala Dosa:
      •  Heat a flat iron tava or a non stick pan.
      • Apply 1-2 tsp ghee on the tava,If using non stick pan than no need to apply.
      • Take a  big  spoonful of the dosa batter. Pour it on the tava.
      • As soon as you pour it, quickly spread the batter in a circular manner with round bottom spoon or small bowl to get a thin and round dosa.
      • Pour some ghee on the top and edges, if you are okay with adding a little more fat to your body.
      • We will cook it from only from one side so no need to flip.Now spread the banana masala on the dosa.
      • Cover the masala dosa with its remaining half and let it cook for 15-30 sec.
      •  Take it off from tava/pan and serve banana masala dosa with coconut chutney and sambhar.
