Jain Banana Masala Dosa 

How to make Jain dosa(without onion and garlic) with banana masala .


Making Masala Dosa is a simple and long process, but its worth the efforts.It will surely make your taste buds tickle :).
                                                    I have used raw banana in masala instead of potato as it's much more healthier than potato.

To start with first we have to get our ingredients ready for preparing plain dosa batter or you can also choose to get ready made batter available almost everywhere if you want instant dosa's.

But here's the process to perpare the batter: 
For that we need to soak dosa rice,black lentils/urad dal, split peigon peas/arhar dal/tur dal(whatever you may call it),methi seeds and then fine grind  it to a paste  and leave it overnight to ferment.I have added toor dal and methi to add crispiness to the dosa and good golden brown color.

INGREDIENTS :

Measuring cup used, 1cup or regular small bowl at home
Serves – 10 to 12 dosa

For Dosa Batter
 2 cup dosa rice
½ cup split black lentils ( urad dal)
¼ tsp fenugreek seed (methi)
1 tsp toor dal
Salt to taste
Water as required

For Jain Banana Masala
4 raw banana
5-10 curry leaves/ kadi pata
½ tsp mustard seeds/rai
1 tsp cumin seed/ jeera
1 or 2 chopped green chilly/ hari mirch
2 tbsp  chopped coriander
¼ tsp turmeric powder/ haldi
½ tsp red chilli powder
A pinch of asfoetida/ hing
1 tsp lemon juice
salt to taste 

Preparation Steps :- 

  • Getting the Dosa batter ready

  • First  clean and wash dosa rice,urad dal,toor dal and fenugreek seeds/methi seeds
  • Soak all of them together for 4-5 hours.
  • Drain the water from the soaked ingredients of batter,but don’t throw away the water you can use it while while grinding it to a paste.
  • Now let's grind it to a fine paste grind,add salt to taste and water as needed,you can use the water while grinding from the previous step as it contains hell lot of nutrients.
  • Now should get nice light fluffy paste as below and should not be grainy.
  • Cover and let the batter ferment for 8-10 hours and keep it in a nice warn place in a deep vessel.
Note :-  After fermentation, the dosa batter rises and doubles up.

Steps to make the raw Banana masala :

  • Cut and boil the raw banana in a pressure cooker or microwave.You could also mash them.
  •  In a  pan, heat oil or ghee, add asafoetida/hing, mustard seeds. Let it fry for about 10-12 seconds then cumin seeds. 
  • Now add  the chopped green chilly and curry leaves. Add the red chilly powder,turmeric powder and fry for 15-30 seconds.
      • Now Add the chopped boiled banana and salt. 
      • Mix the banana properly with the masala. Cook this banana masala for approx. 2-3 minutes.
      •  You can also add fine chopped coriander leaves and lemon juice as per your taste.
      Note :- As banana soaks lot of water you can add fine chopped tomato's.

      Steps to make Masala Dosa:
      •  Heat a flat iron tava or a non stick pan.
      • Apply 1-2 tsp ghee on the tava,If using non stick pan than no need to apply.
      • Take a  big  spoonful of the dosa batter. Pour it on the tava.
      • As soon as you pour it, quickly spread the batter in a circular manner with round bottom spoon or small bowl to get a thin and round dosa.
      • Pour some ghee on the top and edges, if you are okay with adding a little more fat to your body.
      • We will cook it from only from one side so no need to flip.Now spread the banana masala on the dosa.
      • Cover the masala dosa with its remaining half and let it cook for 15-30 sec.
      •  Take it off from tava/pan and serve banana masala dosa with coconut chutney and sambhar.
